porc.wales - New website launched to promote Welsh pork
Wales is famed for producing quality Welsh Lamb and Welsh Beef, but we shouldn’t let this overshadow the nation’s pork offering. The profile of the pork industry is growing here in Wales and it has a fantastic tale to tell – a story of which we believe we should all be very proud.

This is a good way of cooking the fish without too much risk of overcooking and drying it out.

Let's drink to how South Wales is surfing the crest of a beer wave
Hand in relish-smeared hand with Cardiff's pop-up food explosion has been the rise of a craft beer scene. It's taken a little longer to ferment, perhaps, but the summer of 2015 is seeing the local craze for crafty cwrw come to a frothy head, and I for one couldn't be happier.

Wild garlic is an early spring gift that cries out to be harvested – but cut it at the stem and don’t pull out the roots.

Quiche has been a little devalued, courtesy of the ubiquitous soggy bottomed versions widely on offer. That’s a shame as it can be a real pleasure with the right pastry and a generous filling.

Raymond Blanc reveals the Welsh produce which is a must for his menu
Chef and restaurateur Raymond Blanc has revealed that he couldn't do without some of the wonderful produce he sources from Wales. He may run of the most successful restaurants in the UK - the Belmond Le Manoir aux Quat'Saisons in Oxfordshire - which is the only UK country house hotel to have retained two Michelin stars for the past 30 years - but he relies on fresh Welsh produce as he prepares his menus.
